Ingredients

  • 2-3 eggs
  • 3 brussels sprouts diced
  • 1 tbsp olive oil
  • salt & pepper to taste

Instructions

  1. Dice Brussels sprouts

  2. Beat eggs in a cup

  3. Heat frying pan on medium heat with 1 tablespoon olive oil

  4. Add Brussels + pinch of salt. Cook for 2-3 minutes

  5. Add teaspoon of olive oil to Brussels the pour egg mixture evenly onto frying pan

  6. Cook on low heat with lid on for 5 - 7 minutes until done

  7. Add salt and pepper to your liking
